oh, risotto
The zucchini & squash is just starting to peek in at the farmer’s market, so Sarah & I got some and made this yumminess tonight: Easy Zucchini & Corn Risotto
1 tablespoon olive oil
1 large onion, diced
1 zucchini diced*
2 cups arborio rice
1 cup frozen corn**
1/2 cup white wine
4 cups water***
2 tablespoon butter
1/2 cup parmesan
salt & pepper
